The 71st edition of the Michelin Guide Italy not only celebrates the culinary excellence traditionally associated with the Stars but also highlights an increasingly strategic issue for the future of the restaurant industry: sustainability.

Alongside recognition for gastronomic quality, the value of Michelin Green Stars continues to grow. Confirmed for the 2026 edition, these stars are awarded to restaurants that exemplify ethics, environmental responsibility and virtuous practices throughout the supply chain.

Five new restaurants awarded the Green Star

This year, five Italian restaurants have been awarded the Green Star, joining the global elite of around 500 establishments recognised for their commitment to more conscious gastronomy.

Here are the new protagonists of sustainable cuisine:

La Bursch – Campiglia Cervo (Piedmont)
Kircherhof – Albes, Bolzano (Trentino-Alto Adige)
Johanns – Molini di Tures, Bolzano (Trentino-Alto Adige)
Ca’ Matilde – Rubbianino, Reggio Emilia (Emilia-Romagna)
Une – Capodacqua, Perugia (Umbria)

The awarding of the new Green Stars, together with the signs of renewal sweeping across the national scene, confirms a clear trend: the future of catering will be increasingly oriented towards environmental responsibility, the promotion of the local area and an ethical and circular approach.
