Pozzo Serpi is the guardian of an olive-growing tradition deeply rooted in the heart of Ruvo di Puglia. We are an agricultural estate that has made the Coratina monocultivar its flagship, transforming the fruits of our land into an extra virgin olive oil of excellence. Our mission is to produce "liquid health," preserving the integrity of the territory while bringing to the table an authentic product, powerful in flavor and exceptionally rich in polyphenols.

What inspired your participation in SANA Food 2026, and what goals or expectations are guiding you in this new edition?

Our participation stems from the desire to engage with an increasingly conscious audience that seeks not just nourishment in food, but ethical and health value. Our goal for SANA 2026 is to consolidate Pozzo Serpi's position as a benchmark for high-quality Apulian EVO oil, expanding our commercial network toward partners who appreciate biodiversity and total supply chain traceability.

Today’s consumers are increasingly conscious about health and well-being. How has this awareness influenced your production choices or inspired new product concepts?

Well-being is in the DNA of our Coratina. This awareness has pushed us to refine our harvesting times (early harvest) and immediate cold extraction techniques to maximize the presence of oleocanthal and natural antioxidants. We do not just sell a condiment; we sell a "superfood." This has also led us to focus more on packaging, ensuring it is capable of preserving the organoleptic and chemical properties of the oil intact until the moment of consumption

Tradition and innovation often go hand in hand in a company’s growth journey. How do you manage to honor your roots while giving them a contemporary interpretation?

Our roots lie in the centuries-old olive groves of Ruvo di Puglia, but our gaze is turned toward the future of precision agriculture. We interpret tradition through modern design and direct communication, telling the farmer's story with a fresh and elegant language. For us, innovation resides in the process: using cutting-edge technology in the mill allows us to extract exactly what nature has created without alteration, guaranteeing a qualitative standard that the purely empirical traditions of the past could not consistently ensure.

Transparency, sustainability, and traceability have become essential values in today’s market. How do you bring these principles to life in your distribution practices?

For us, traceability is a commitment of honor: every bottle of Pozzo Serpi speaks of the specific field it comes from. We adopt low-environmental-impact agricultural practices, respecting the natural cycles of the Murgian soil. In distribution, we prioritize short supply chains and partnerships with entities that share our ethics, ensuring that every step—from storage to delivery—respects the dignity of the product and the labor of those who created it.
