In a few lines, tell us who you are, what makes your company unique, and what your mission is. The history of Salumificio Carbone has the scent of passion and the authentic taste of good things once made, today, as in the past, respecting the principles of craftsmanship. In the 1996 Carmine Carbone founded Salumificio Carbone which he managed with his wife Margherita, and his daughters: Valentina and Alessia. The love for their lan, leads the company to prefer 100% Italian pigs, many of which are raised on the uncontaminated territory of Basilicata. In this way, a production that is more respectful of the animals welfare is guaranteed. The company’s mission is to produce quality, handcrafted, preservative-free cured meats, flavoured with local spices, such as Senise chilli pepper IGP and wild Lucanian fennel.

What inspired your participation in SANA Food 2026, and what goals or expectations are guiding you in this new edition?

The decision to participate in SANA Food 2026 was born from the perfect harmony between our corporate philosophy and the values of SANA Food, which places conscious, ethical and healthy eating at the centre. As a cured meat company that produces quality cured meats, we feel the duty and pleasure of witnessing how the Lucanian tradition can evolve sustainably without ever sacrificing excellent taste. Our goal is to connect with professionals in the Ho. Re. Ca and restaurant-retail industries, who like us, are looking for authentic, quality products. Furthermore, it is an opportunity to discover new market developments and forge commercial relationships to expand our customer base.


Today’s consumers are increasingly conscious about health and well-being. How has this awareness influenced your production choices or inspired new product concepts?

The growing consumer focus on health and well-being is, for us, an opportunity for growth and valorisation. For this reason, our products are free of preservatives and additives, preferring artisanal methods and slower curing methods. The quality of our products is also guaranteed by the selection of raw materials from short and certified supply chains. Furthermore, they are gluten-free and lactose-free cured meats so that they are accessible to everyone without sacrificing the pleasure of taste.

Tradition and innovation often go hand in hand in a company’s growth journey. How do you manage to honor your roots while giving them a contemporary interpretation?

In our company, tradition is a living knowledge, thanks to a deep knowledge of raw materials. We value our origins by keeping artisanal work alive, such as hand binding, respect for curing times, and a strong connection to the local area. Innovation allows us to enhance this heritage, constantly improving quality, safety, and sustainability. We invest in research, process control and new production solutions to meet consumer needs.

Transparency, sustainability, and traceability have become essential values in today’s market. How do you bring these principles to life in your distribution practices?

Transparency, sustainability and traceability guide every choice even in the distribution phase. We work with selected partners who share our values, favoring controlled supply chains. We guarantee the complete traceability of our products, from raw materials to sales, through control and monitoring systems, which ensure quality and clear information for the consumer. We optimize logistics and packaging to reduce environmental impact.
