Salumificio Santa Barbara is located in Casabona, in the inland area of the province of Crotone, betwwen the sea and the mountains. This unique microclimate creates the ideal conditions for a slow, natural curing process. We produce artisanal cured meats by raising our pigs in a semi-free-range system and processing the meat without preservatives or artificial colorings: only meat, saltand chili pepper.

What motivated you to participate in SANA Food 2026 and what expectationguide you?

SANA Food 2026 represents a strategic opportunity for us to connect with an aware and quality-driven audience that values natural ingredients. We are partecipating with the goal of presenting our production model: a short supply chain, semi-free-range farming and fully artisanal processing from trimming the meet to the curing stage. We aim to build new business relationships, but above all to share a culture of authentic cured meats, without compromise.

Today’s consumers are increasingly attentive to health and well-being. How has this influenced your choices?

In truth, our approach was established long before it became a trend. We do not use preservatives or artificial colorings, only carefully selected meat, salt and chili pepper. Semi-free-range farming ensures animal welfare and superior raw material quality. Today, this consistency is recognized by consumers who seek clean labels and trasparent products. We have not had to change direction; we have simply continued to believe in simplicity.

How do you enhance tradition in a contemporary way?

Our strength lies in craftsmanship. Every stage of production preserves traditional gestures and natural timing. Innovation, for us, does not mean altering the product but precisely monitoring every step to ensure consistent quality. We communicate tradition in a modern way, without distorting it. We remain faithful to our territory and to climate of Casabona, which are integral to the final risult.

How do you translate transparency, sustainability and traceability into your practices?

Our supply chain is internal: we raise, process and cure our products directily. This allows us to overseeevery stage and ensure full traceability. For us, sustainability means respect for the land, natural rhythms and non-industrial production. Transparency is complete: those who choose our cured meats know exactly what they are bringing to the table. It is a daily commitment, not a slogan.
