SbrisolAut is a company founded in 2022 in Mantua that produces high-quality, traditional local baked goods, employing only people on the autism spectrum in its production. SbrisolAut's mission is to create job opportunities in the food production sector for adults on the autism spectrum in an inclusive work environment, specifically structured around their functioning and skills. The name SbrisolAut itself, which refers to the main product (a traditional cake made from sweet crumbs obtained from the simplest ingredients in baking, flour, butter and sugar) and the autism of those who produce it, encapsulates our company mission.
What inspired your participation in SANA Food 2026, and what goals or expectations are guiding you in this new edition?
SANA Food is the most important event dedicated to responsible, ethical, healthy and sustainable consumption, and what it offers is perfectly in line with our mission and values. For Sbrisolaut, production is not an end in itself, but is exactly in line with SANA's intentions, which is not only to showcase products, but also to offer participants a cultural journey that promotes quality, sustainability and innovation.
Our participation aims to add the theme of workplace inclusion to the values already present at the event. We hope that other manufacturers interested in promoting social impact will join us in the future to continue our commitment to building a more inclusive world of work for all.
Today’s consumers are increasingly conscious about health and well-being. How has this awareness influenced your production choices or inspired new product concepts?
Commercial networks, whether large-scale retailers, ethical shops or trendy restaurants, are constantly seeking to differentiate themselves and offer their customers products that tell a simple story and convey high values.
Tradition and innovation often go hand in hand in a company’s growth journey. How do you manage to honor your roots while giving them a contemporary interpretation?
SbrisolAut appeals to the most discerning consumers by ‘telling a story’ of social inclusion, respect for the environment and a return to the gastronomic traditions of the region, building a relationship of shared values directly through the product itself, how it is produced and packaged, its history and its high quality.
Why did we choose to produce Sbrisolona? Sbrisolona is a typical Mantua dessert of peasant origin, which probably owes its rise to fame in the 17th century to its introduction to the Gonzaga court. It is, to all intents and purposes, the most representative dessert of Mantua cuisine, certainly the most recognised and widespread even outside the province of Mantua. Although all Sbrisolone cakes look similar and the recipe is essentially traditional, the methods of preparation differ, resulting in products that are more or less sweet, more or less crumbly and with more or less almonds. Excellence is achieved through the perfect combination of ingredients, workmanship, passion and love in the preparation.
Sbrisolona is ‘simple’ because it is made with simple ingredients: butter, sugar, flour. These are ingredients found in every pantry, ones you don't need to put on your shopping list to remember to buy, but precisely for this reason, we often forget about them. Our pastry chefs are like that too: simple, immediate, invisible, and for this reason we often forget about them. We only think of them on rare celebratory occasions to say how important it is to take care of those less fortunate than ourselves, then they quickly disappear from the list of things to take care of. Sbrisolona is “special”, but it does not require special skills or special treatment. It is not a display of talent in the art of pastry making, but a product that anyone, absolutely anyone, can make, as long as they pay attention, are precise and put a lot of passion into it. And it is with these “special ingredients” that our autistic pastry chefs prepare it.
