Extra virgin olive oil: a link between land, tradition, and well-being, encapsulated in every drop. At SANA Food, the Focus on Quality EVO Oil celebrated Italian excellence, showcasing a product that symbolizes Italian farming culture and embodies Mediterranean authenticity. Organized by Assoprol Umbria and led by Dr. Agr. Daniele Converso, the meeting took buyers and visitors on a journey through the flavors, aromas, and stories of olive groves, oil mills, and territories.

The project highlighted extra virgin olive oil not simply as a cooking ingredient, but as a true cultural and nutritional heritage, capable of recounting the identity of the territories and the wisdom of those who produce it. Each bottle is the result of expert hands and agricultural choices that are attentive to biodiversity, environmental sustainability, and respect for natural cycles, transforming the harvest into an authentic, traceable, and certified quality product.

Through guided tastings and storytelling, participants had the opportunity to explore the sensory nuances of each oil, from light fruity to spicy, from herbaceous to more enveloping and complex aftertastes. Each drop thus becomes a living story of the territory, microclimates, cultivar varieties, and the farming history that has accompanied oil production for centuries.

The focus also highlighted the importance of EVO oil as a central element of the Mediterranean diet, a symbol of health, balance, and well-being. Each bottle is not just a condiment, but a global ambassador of Italian authenticity. Oil thus becomes a bridge between tradition and the international market, between sensory pleasure and nutritional awareness, embodying the idea that taste and responsibility can go hand in hand. Quality extra virgin olive oil is much more than a product: it is culture, territory, sustainable innovation, and Italian identity to be shared with the world.
