We are a family-run agricultural company based in the heart of the Monti Dauni in Apulia, Southern Italy. Our pasta is born here, in an ancient and extraordinary land, where ideal conditions allow us to grow healthy, high-quality durum wheat. Our deep connection with the land and generations of experience in durum wheat cultivation inspired us to preserve and enhance this family heritage. The transformation of our organic durum wheat into remilled semolina is the first step in producing Dimora pasta and our other products, all made through a high-quality supply chain that embraces sustainable farming practices to protect soil fertility and preserve biodiversity.

What does it mean for your company to be part of an event dedicated to healthy and sustainable eating, with bot national and international scope?

For us, taking part in SANA means becoming part of a community that shares our values. It is an opportunity to tell the story of a transparent supply chain that begins in our fields and reaches consumers’ tables, demonstrating how quality, sustainability and tradition can coexist. SANA also provides an important opportunity to connect with industry professionals, helping us share our story and promote Italian organic products in both national and international markets.

What connection do you have with your home region, and how do local traditions, culture, and community shape your identity and your products?

Dimora was born in Apulia, on Monti Dauni, an area traditionally known as the “Granary of Italy” thanks to its fertile soils and ideal conditions for growing durum wheat. Our company has been rooted in this land for generations, and every product reflects our family’s heritage. Preserving and passing on these traditions while respecting the land has always been at the heart of our identity.

The founder's idea, an entrepreneurial insight, a tradition inherited and made relevant today: tell us the story of your company.

The Dimora brand was born from Lara’s vision to continue cultivating the same land purchased by her grandparents, Peppe and Rocchina, in 1959. She expanded the business by introducing new crops that contribute to improving soil quality. After more than twenty years of experience, in 2020 Dimora was established as the perfect combination of tradition and innovation, transforming premium raw materials into a range of high-quality products.

SANA Food 2027 focuses on "Longevity Nutrition," the nutritional approach aimed at improving quality of life and extending its length. This theme fits within the concept of "One Health," which recognizes human, animal, and ecosystem health as one interconnected system. Is this a model reflected in the way you work, from respect for the soil and for people through to the final quality of the product?

Dimora is more than just a farm, it is our home, surrounded by nature. Growing up and working in this environment has taught us to appreciate and protect everything around us. For this reason, we are committed to safeguarding the environment and natural resources by adopting farming practices that promote crop rotation and avoiding the use of chemical pesticides and synthetic fertilizers. We are fully aware of the essential role nutrition plays in human health, and this awareness guides every stage of our production process, from sowing to packaging, to ensure safe, wholesome and authentic food. We cultivate a single-variety organic durum wheat with a naturally high protein content, giving our pasta its firm texture and excellent cooking performance. Its lower starch content also makes it highly digestible. The same philosophy inspired the development of our new snack, DimoCrock, made with wholegrain organic durum wheat semolina and designed as a healthy alternative to traditional snacks.

What new products or innovations will you be presenting at the fair, and which market/channel are you targeting? What message would you like to leave with visitors who come to see you?

We will showcase our range of organic pasta together with our baked specialties, legumes, flours and semolina. Ourproducts are aimed at distributors, specialty food retailers, buyers, the food service sector and consumers looking forpremium-quality organic products. The message we want visitors to take home is simple: every food choice can help support an agriculture that respects theland, enhances local traditions and brings authentic products directly from our fields to consumers’ tables.
