Colle di Seta grows its own raw materials using integrated, zero-residue farming methods. Part of the fruit and vegetable production is sold directly at three separate company stores. The remainder is processed at the company's own plant. Colle di Seta offers a wide range of traditional vegetable preserves, including fruit compotes, vegetables in oil and sweet and sour, pâtés and spreads, pestos and cream soups, spices, and fruit juices. This traditional line is complemented by a line of innovative processed products, the result of collaboration between the company and universities or research institutions.
What inspired your participation in SANA Food 2026, and what goals or expectations are guiding you in this new edition?
Our intention is to participate in the fair to promote our range of innovative, highly nutritional products, the result of collaborations with universities and research institutions. These include our industrial patent, a flavoring for vegetable broth obtained through the action of lactic acid bacteria. Or our VASOMIX, soups made using the jar-cooked technique and stable at room temperature.
Today’s consumers are increasingly conscious about health and well-being. How has this awareness influenced your production choices or inspired new product concepts?
Consumer awareness of health and well-being is a guiding principle for our production. One of our latest scientific collaborations with the CNR (National Research Council) resulted in a specific food for people over 65, a segment of consumers that stands out for their numbers, purchasing power, and nutritional/health awareness.
Tradition and innovation often go hand in hand in a company’s growth journey. How do you manage to honor your roots while giving them a contemporary interpretation?
Ours is a company rooted in tradition. Our raw materials come from local traditions, as do our recipes. For us, innovation is a tool with which to infuse processes to obtain products that are better in terms of nutrition, health, sensory appeal, and sustainability. At the same time, they are comparable to what our gastronomic tradition offers, in terms of flavors and consumption habits.
Transparency, sustainability, and traceability have become essential values in today’s market. How do you bring these principles to life in your distribution practices?
Colle di Seta is a company whose core business is short supply chains and zero-mile products. Our current distribution network is therefore fully aligned with the principles of sustainability, transparency, and traceability. The same system and principles are applied to the distribution of processed products, which currently operates primarily domestically but is also expanding into international markets.
