Caseificio Comellini is a historic company from the Emilia-Romagna region, specialized in the production of cheeses rooted in a long-standing artisanal tradition. We work exclusively with local, Italian milk sourced from a carefully controlled supply chain built over time with trusted farmers. What inspired your participation in SANA Food 2026, and what goals or expectations are guiding you in this new edition? 

SANA Food represents a strategic event for us, perfectly aligned with our growth path and the values that guide our company. We are participating with the aim of strengthening dialogue with an audience that is increasingly attentive to quality, health and sustainability, while also consolidating and developing new business relationships at both national and European level. It is also an important showcase to share our identity and present an offering that combines dairy tradition with product innovation.

Today’s consumers are increasingly conscious about health and well-being. How has this awareness influenced your production choices or inspired new product concepts?

In recent years, we have listened very carefully to consumers’ needs, which are increasingly oriented toward high-quality products. This led us to develop our Lfree-certified Lactose-Free Line, allowing even lactose-intolerant consumers to enjoy our cheeses without sacrificing taste. A concrete example is the Comellini Lactose-Free Ricotta, also designed for the professional channel: a product that preserves all the creaminess and delicate sweetness of the original recipe, while meeting new nutritional needs.

Tradition and innovation often go hand in hand in a company’s growth journey. How do you manage to honor your roots while giving them a contemporary interpretation?

For us, tradition is not an end point, but a solid foundation from which to move forward. We continue to follow artisanal production methods and historic recipes, such as those used for Squacquerone di Romagna DOP, one of the symbols of our production. At the same time, we invest in process and product innovation, adapting formats, functionalities and nutritional characteristics to the demands of the modern market.

Transparency, sustainability, and traceability have become essential values in today’s market. How do you bring these principles to life in your distribution practices? 

Transparency and traceability start with the selection of raw materials: we use exclusively local, Italian milk from a controlled supply chain deeply rooted in the territory. This approach enables us to guarantee consistent quality and safety for the end consumer. From a distribution perspective, we work across diversified channels—from large-scale retail to specialized stores—while maintaining high quality standards and clear product communication. Sustainability, finally, is a daily commitment that involves the entire supply chain and represents an integral part of our responsibility as a company.
